A natural amphitheatre in the hill separating Piedmont from Liguria, the vines go up to an altitude of 500m – sometimes on slopes up to 85%.

 

The altitude means there is less filtering of the sunlight so sun exposure is fabulous. The soils are poor with good drainage and the density of plantation means there is little foliage and only superb grapes.

 

There is also a big difference between the day and night temperature which is perfect for fruit expression. The mountain breeze thickens the skin improving concentration.

 

This is massively concentrated for the appellation and the old vines produce only a small amount of fruit but it is amazing. Fermentation is performed at controlled temperatures so that the bouquet is not polluted by carbon dioxide and all of these elements create the fresh, zesty wine which is salivating and delicious.

 

Sparkling wine with fine and persistent perlage. Brilliant yellow color, aromatic scents typical of the varietal, floral and fruity with notes of honey, sweet taste and persistent finish. Ideal matching with desserts and pastries. Serve chilled at 8°C.
